Vitality Muffins

Ingredients
1/2 cup unsalted butter, room temperature1/2 cup sugar1 egg1/2 cup wheat or oat bran1 tsp orange zest (from two small oranges)1/4 cup whole milk1 3/4 cup All-Purpose flour, sifted2 tsp double-acting baking powder1/2 tsp salt1/4 tsp Baking Soda1/2 cup orange juice (juice from two oranges)1/2 cup slivered almonds1/4 cup Uncle Sam cereal
Directions
Combine all ingredients except almonds and cereal, alternating wet and dry. Mix gently by hand until ingredients are just blended. The batter should be thick. Fold in almonds.
Divide batter into muffin cups (use muffin liners or they will stick like crazy!) and top with Uncle Sam cereal.
Bake at 375ºF for 30 min., or until a toothpick inserted into the center comes out clean.
