Onion, Mushroom and Cheese Omelet

Ingredients
2 large eggs1 Cheese slice2 tsp EVOO1 Tbsp chopped onions1/2 cup sliced mushroomssalt and pepper to taste
Directions
Use two small omelet pans. In the first heat tsp of EVOO over medium-high heat and sauté onions and mushrooms, add salt and pepper to taste. In a bowl crack two eggs add salt and pepper and beat. In the second omelet heat the EVOO over medium low heat, pour eggs into pan and wait for the bottom to set before flipping. Once omelet is flipped lay the cheese on top of the eggs and place the sautéd veggies on top of the egg. Once the egg is set completely fold over omelet and serve.
