Ingredients
8 hamburger buns (calculated using white but better for you with wheat)5 oz cooked ham, cubed8 oz cheddar cheese, cubed1/2 c. large chopped red pepper3 hard boiled eggs, chopped1/2 medium onion, chopped1/4 c chopped olives (I use kalamata, but traditionally my family did the stuffed green ones)1/4 c sweet pickle, chopped1/3 c mayonnaise
Directions
Makes 8 sandwiches, each of which is substantial enough to be a single serving.

Mix all ingredients except the buns together in a bowl.

Heat the oven to 300 degrees.

Lay the buns onto pieces of aluminum foil large enough to wrap them in. Spoon 1/8 of the mixture into each bun and close the buns. Wrap the sandwiches in the aluminum foil.

Bake at 300 degrees for 25 minutes and serve warm/hot.

This mixture can be increased or decreased to feed however many people you need. It also freezes well. I'll make the sandwiches up and put them in the freezer wrapped and ready to go. When I want one, I'll pop it in the oven with an extra 5 minutes time to cook, and they're great!

    I have leftover ham in my fridge right now--I'm going to try this tonight! My family is a bit picky though, so I'll leave out the pickles and olives. - 12/27/08

    This sounds like a nice way to use ham. I'll bet it could be adapted for other meats as well...turkey, for instance - 12/27/08
