Bran Muffins with Dates, low fat, vegan

1.5 c wheat bran1 c light soy milk12 cut up dates1/2 c unsweetened apple sauce1 egg/replacer equivalent 2/3 c brown sugar1/2 tsp vanilla extract1/2 c flour (all purpose white)1/2 c flour, whole wheat1 tsp baking powder1 tsp baking soda1/2 tsp saltI added a little cardamom and nutmeg as well.
Soak bran with milk and dates for 10 minutes.
In another bowl, sift together dry ingredients.
In large bowl, stir together applesauce, egg (replacer), brown sugar, vanilla.
Beat in bran mixture to above.
Stir in dry until just blended. (Fold in berries or other fruit now, if using)
Spoon into 12 large muffin cups.
Bake 15-20 minutes at 375, until tops spring back and toothpick come clean.
Serving Size: Makes 12 muffins
