Serving Size: makes 12 large flatbreads
Mix all ingredients together in a large bowl. If the dough seems too dry, add a tablespoon or two of warm water. I mix/knead this with my hands right in the bowl. It's a pretty stiff dough. Cover and let sit for at least 15 min. Heat a cast iron or non-stick griddle on medium heat. This goes faster if you have a double-burner sized griddle and you can do two at a time. On a clean, floured surface, divide the dough into twelve equal pieces, and keep the pieces covered while you work on each one. Roll out to about 8 inches, thin but not too thin. Cook carefully on hot griddle, turning once when they begin to puff up. Let cool on towels before storing in plastic bags. You should probably store in the fridge since there are no preservatives, but ours do not last that long! Serve with grilled meat, hummus, veggie dishes, salad, anything!
