Ingredients
1 cup chana dal3 cups water1 medium onion, diced10 oz package frozen spinach, thawed1 can diced tomatoes1 Tbsp earth balance buttery spread1 tsp curry powder (to taste)3 cardamom pods1 tsp cumin seeds1 tsp salt3 cloves minced garlicblack pepper to taste
Directions
Cook dal in water until tender. Drain excess water.

In large skillet or saucepan, melt EB and add spices until cumin seeds crackle. Add onions and garlic and saute until tender. Add remaining ingredients and mix thoroughly. Simmer 10 minutes or more. Remove cardamom pods. Partially puree to a chunky mix with immersion blender. Serve over rice.
