Quick Chicken Curry

Ingredients
Chicken breast, brown rice, zucchini, carrots, vegetable broth, garlic, curry powder, onions, garlic, salt, pepper, milk, cornstartch
Directions
Serves one, can easily be doubled.
Prepare Rice.
Cut chicken breast into bite sized pieces.
Poach chicken in vegetable stock until cooked almost through. Add Carrots and Zucchini Remove chicken and most of stock, leave vegetables.
Add teaspoon of olive oil to pan.
Add onions and cook until translucent.
Add garlic, gook until garlic just starts to brown.
Add chicken and stock back to pan.
Add milk and curry power to pan, stir.
Let simmer for a few minutes until thickened.
Serve over rice.
