Karen's Carb-Easy Meatloaf

Ingredients
2 lb. 90% lean ground chuck1 medium white onion, chopped3 cloves garlic, minced3 jumbo eggs, whipped2 T. Lea & Perrin Worstershire Sauce1/2 c. Napoleon tomato paste8 T. Hunt's tomato ketchup, divided1 envelope Lipton Onion Soup mix1/2 sleeve Premium Salted Crackers, crushedCooking Spray (I prefer organic sunflower or olive oil)
Directions
Preheat oven to 350 degrees F. Combine in a large mixing bowl the hamburger and egg. Mix thoroughly by hand, kneading the egg into the hamburger. Add cracker crumbs and incorporate thoroughly. Add onion, minced garlic, salt, pepper and mix well. Add tomato paste and soup mix. Mix again until thoroughly incorporated. Add worstershire sauce and half of the ketchup. Mix. Spray a glass casserole dish with cooking spray. Pour in meat mixture and flatten with hand. Cover with remaining ketchup and salt and pepper. Bake at 350 degrees for 30 minutes.
