Stuffed Peppers

Ingredients
1 Lb 93% lean ground beef1/2 medium yellow onion10 oz package of frozen corn (1.5 cups)1.5 cups medium thick and chunky salsa4 red bell peppers (or color of your choice)1/2 Cup of Colby Monterrey Jack shredded cheese1/2 Cup water
Directions
Cook hamburger & onion in skillet over medium high heat. Add corn, salsa and cooked rice, reduce heat to low - medium and heat through. Spoon into peppers. Place peppers in baking dish and add 1/2 cup of water to bottom of dish. Cover with foil and bake for 30 min. Remove foil, top with cheese and cook for another 10 minutes or until cheese is browned.
