Mediterranean Quinoa Salad

Ingredients
2 c. water1 c. uncooked quinoa1/2 c. red wine vinegar1/4 c. olive oil1 small red onion, diced1 red pepper, diced12 grape tomatoes, chopped1/2 c. chopped kalamata olives1/2 c. crumbled feta cheese (reduced fat)1/2 c. chopped fresh cilantro1 tsp. salt1/2 tsp. ground pepperJuice of one lemon
Directions
1. Bring quinoa & water to a boil over medium eat. Reduce to a simmer & cook for 15-20 minutes or until water is absorbed in quinoa. Fluff with a fork & cool for 5 minutes.
2. Add the oil & vinegar & let quinoa come to room temperature.
3. Add onion, tomatoes, pepper, olives, cilantro, & salt & pepper. Stir gently. Add feta cheese & gently combine. Chill for 2 hours to let flavors combine. Squeeze lemon juice over salad right before serving to brighten flavors.
