1/2 cup Pinto beans (cooked)1/2 cut Brown Rice medium grain (cooked)*1 1/2 tsp salt (optional)1 tbsp Pace picante Salsa1 tbsp chopped Cilantro1/4 cup plain Greek Yogurt1/2 oz Kirkland Organic Tortilla Chips, (7 chip)
Note: Beans and rice can be cooked in advance to save time.)
Boil beans in water until tender (45mins). *optional add salt to water as you boil your beans. ( to save time Boil a few cups of beans at a time you can always package extra and freeze for a later date)
Steam brown rice.
Mix beans and rice together in bowl and top with Salsa and plain yogurt. Last but not least sprinkle with chopped cilantro.
