Banana Pecan Muffins

2-1/2 c.Wheat flour, white, all-purpose, enriched7/8 c. Granulated Sugar 2-1/2 tsp Baking Powder3/4 tsp. Salt3/4 c. ripe Banana, mashed1/8 c. Canola Oil1 lg. Egg2/3 c. Milk, 1%7/8 c. Pecans halves, unchoppped
Mix dry indgredients. Mix milk, egg and oil. Add alternatley with mashed banana to dry ingredients. Gently stir in mashed bananas. Batter will be fairly dry. Spoon into muffin cups (sprayed or with paper cups) until 7/8 full. Bake at 350 for 20-25 min. Test with toothpick.
