Vegan Sweet Potato Bars

Ingredients
SWEET POTATO-CREAM260-280g peeled sweet potato8 soft pitted dates1 tsp cinnamon1/4 tsp ground nutmeg2.5 tbsp coconut oil1 pinch of saltCRUST10 soft pitted dates100g almonds1 big tbsp unsweetened cocoa powder
Directions
Cut the sweet potato into cubes and bake till soft at 200°C for about 25-30min.
In the meantime prepare the crust by processing all the ingredients in a food processor until you get a sticky mixture. Press into a baking dish that is lined with wax paper.
Once the sweet potato is done let it cool down a little. Then process the sweet potato with the rest of the ingredients in a high speed blender until creamy. Spread the mixture on the crust and put it in the fridge for a couple of hours.
