Shrimp and Chorizo in Garlic Sauce

Ingredients
*Extra Virgin Olive Oil, 16 tbsp Chorizo, pork and beef, casting remove 16 oz Vidalia Onion finely chopped (1/4 cup, 40g or 1.4oz), 0.25 cup *Adobo, 1 tsp Paprika, 1 tsp Garlic, 1 clove ) Shrimp, raw, peel shrimp 32 oz
Directions
In a med saucepan heat 2 tablespoons of oil over med-high heat and saute chorizo and onions. Break chorizo up with spoon while cooking until it resembles ground beef. Add the adobo, paprika and garlic. Cook until fat is rendered and the onions are tender and cooked down into the chorizo. Add the remaining oil, lower the heat to med-low. Let the flavors infuse over the low heat for 5 to 7 minutes. Add shrimp. Cook until shrimp are pink and evenly cooked about 6 to 8 minutes. serve with a crusty chewy bread or over rice.
