Asian Salmon

  • Number of Servings: 2
Ingredients
1 piece of Salmon (cut in half)2 tbsp of peanut butter (crunchy low fat)3 tbsp soy sauce3 tsp Warchester sauce
Directions
Mix the peanut butter, soy and warchester sauces in a bowl and stir till the peanut butter and sauces are all uniforn.
Place both pieces of fish in a zip lock bag and pour in sauces.
Let marinate in the refrigerator for a good 2 to 4 hours so that the fish can absorb all the flavors.
Preheat oven to 350 degrees. Place fish on scale side up in the oven for no more than 30 minutes or until fish has a glazed crust on both sides. Serve hot with veggies

    I left out the Worcestershire sauce and only used about half the soy sauce. It was thicker than a marinade, so I just spread it on like a glaze. I also added some ginger and some Thai spice blend that went really well with the peanut flavor. - 3/9/08

    I love Salmon and this gave me a new way to cook it, however it was a bit messy. Not enough liquid to make it a marinade. I added Lime juice to help. Put it over some rice. It was okay, but again nothing to special. - 2/7/08

    Sounds interesting. How much is a "piece" of salmon? Do you mean a large fillet since the serving size is for 2? I have not been able to find low fat crunchy style peanut butter (only creamy), but I'll give it a try with my regular stuff. I never heard of cooking a fish scale side up either. - 3/21/07
