Chicken Coconut Korma

Ingredients
2 Tbsp olive oil, extra light1 cinnamon stick (or 1/4 tsp ground cinnamon)1/4 tsp ground cloves2 chicken breasts, cut into pieces2 garlic cloves, minced1/4 c chopped fresh onion1/2 tsp ground cumin1/2 tsp ground coriander1/2 tsp ground ginger1/2 tsp cayenne pepper (red pepper)1/2 tsp turmeric powder1/2 cup tomato sauce1/2 cup heavy cream1 Tbsp parlsey flakes1/2 cup coconut flakes
Directions
Heat oil with cinnamon, cloves. Add onion and garlic and cook until opaque.

Add chicken and cook. Mix in tomato sauce and seasonings. Simmer 10 minutes. Add cream and coconut, simmer another 5 minutes. Sprinkle parsley and serve.

Serving Size: Makes 4 servings (1/2 chicken breast each)
