Rustic Indian Mutton/Lamb Curry

Ingredients
1 lb Mutton or Lamb (lean, trimmed, preferably for stew)1/2 a large red onion - sliced (about the same weight of the mutton)1 tbsp oilfor mutton marination-1 tsp turmeric 1/4 tsp red chilli powdersaltdrizzle of oilFor Garam Masala Powder (Warli-style) 3-4 kashmiri red dried chillies (if unavailable, add some deghi mirch powder or paprika directly into the curry)1/2 tsp cumin seeds1.5 tsp coriander seeds2 black cardamom pods2 cloves1/4 tsp black peppercornsFor Green masala paste - to grind4-5 garlic cloves1 inch ginger pieces (about same amt as garlic)3 hot green chillies1/4 cup packed cilantro leaves2 tbsp watersaltlemon juice
Directions
Marinate the mutton with turmeric, salt, red chilli powder and oil, coat well and set aside

In a heated skillet, add ingredients for garam masala powder, toast the whole seeds and spices on low heat for 10-15 minutes, stirring ocassionally, till the seeds get fragrant. grind all of it to a fine powder. set aside.

grind all the ingredients of the green masala paste until smooth, set aside.

Heat oil in a heavy pan/pressure cooker. add onions, saute till light golden, add the garam masala powder and green masala paste. saute till fragrant (5 min). add 1 cup water, the mutton, mix well, coker with a heavy lid and cook for 40 minutes till cooked.

turn off the stove and let it cool down slightly before serving.

serve with chapati, rice, bhakri
