Ingredients
1 egg yolk1/2 tsp water2 tbs butter (salted/unsalted), Melted1/4 tsp lemon juicesalt, pepper, chayanne to taste
Directions
wisk water and yolk in double boiler (bowl over boiling water) till thick
add butter, continue to wisk
remove from heat, wisk in lemon
season to taste

Serving Size: makes about 1/4 cup
