High-Altitude Banana Bread

4 tablespoons butter, softened2 eggs2 -3 bananas, very ripe2/3 cup sugar1 1/3 cups flour3/4 teaspoon salt1/2 teaspoon baking soda1/4 teaspoon baking powder1/2 teaspoon cinnamon (optional)1 cup slivered almonds (optional)
1. Preheat oven to 350°F.
2. Combine butter, eggs, sugar, and bananas in bowl. (Bananas should be finely mashed).
3. Combine dry ingredients in another bowl.
4. gently stir dry ingredients into wet ingredients.
5. Add optional ingredients (chopped nuts, dried fruit, chocolate chips), stir in 1/2 to 1 cup.
6. Pour dough into a greased 9x5" loaf pan.
7. Bake at 350F for 50 minutes, or until toothpick inserted in center comes out clean.
8. Let bread cool in pan for 5-10 minutes before turning out.
9. Serve 1" slices - awesome toasted with butter on it!
