Cabbage Vegetable Soup

Ingredients
1 28 oz can crushed tomatoes1 medium onion, diced3 stalks celery, diced3 medium carrots, diced1 head cabbage, shredded1 14.5 oz can green beans1 12 oz can sweet yellow corn1 15 oz can pinto beans
Directions
1. Place tomatoes, onion, celery, carrots, and cabbage in a pot, simmer over medium heat until tender, about 20 minutes.

2. Add canned vegetables. Heat and serve.

Serves 6, 1 1/2 cups per serving

    A great basic recipe. I did use frozen mixed veggies instead of canned. I rinsed the pinto beans well, and used low sodium italian-seasoned canned tomatoes. I added 1 Tb. mrs. dash for the seasoning and 2 cps. low sodium veggie broth. Very yummy and low calorie. - 9/21/08

    I enjoyed this soup made in my crockpot. It lasts well in fridge and even freezes well, which I do in portions so I can have it microwave wamr quickly. I throw in a little leftover meat (all of them are great - fish, chicken, beef, pork), if I want more protein. - 6/18/07

    I would add a can of the low sodium chicken broth, and a little more seasoning. I would assume the "serving" would be the usual 1 cup size, but with the amount of calories in this soup you could easily eat 2 cups. - 3/20/09

    This soup is delicious. I didn't drain the juice from any of the canned veggies so therefore I didn't have to add any salt. I didn't have pinto beans so I added drained and rinsed chick peas. The juice from the chick peas is very salty and that's why I drained and rinsed them. Will make it again - 9/22/08

    I used 2 smaller cans of diced tomatoes, one plain and one with green peppers for added kick, used frozen corn and green beans, added garlic, and garnished with fresh cilantro. Very versatile. - 9/24/08

    I make this but always cook it in my homemade chicken broth made with lots of herbs and no salt. Chill and remove fat and freeze the broth. Makes it more flavorful. - 3/20/09
