Zucchini and Squash "Pasta"

1 tablespoon olive oil1 medium yellow onion, diced1 can diced tomatoes with green chiles1 medium yellow squash1 large zucchini (about 1 pound)2 tablespoons grated Parmesan cheese
Saute onions in olive oil until translucent. Add tomatoes (including juice), cover and cook on medium low for 10 minutes.
While tomatoes are cooking, use a spiralizing tool to cut zucchini and squash into "pasta". (If you don't have a spiralizer, simply cut vegetables into extremely thin strips.)
Add vegetable "pasta" to cooked tomatoes (most of the liquid will have evaporated). Cook for 1-2 minutes, just enough to heat vegetables. Top with Parmesan cheese, enjoy!
Serving Size: Serves 2 as a main dish, or 4 as a side dish
