Pepper Jack Turkey Meat Loaf

2 egg whites1 cup plain bread crumbs1/4 cup yellow onion, chopped1-1/2 lb 97% lean ground turkey4 slices reduced fat pepper jack cheese3/4 cup fat free mozzarella cheese, shredded
1. Preheat oven to 350.
2. In a large bowl, combine the egg whites, bread crumbs, onion and salt & pepper. Add turkey and mix well.
3. Press half of the turkey mixture up the sides of a greased 8" x 4" x 2" loaf pan. Sprinkle the mozzarella cheese over the meat. Top with remaining turkey and pat down.
4. Bake, uncovered, for 50-55 minutes or until meat is no longer pink and a meat thermometer reads 165.
5. Remove from oven. Top evenly with sliced cheese and return to oven for an additional 5 minutes or until cheese is melted.
6. Remove from oven and allow to rest 10 minutes before slicing.
