Quinoa Salad - Greek Style

Ingredients
Quinoa-Tru Root Organic, 2 cup Kirkland Artichoke Hearts marinated in oil, 100 gram(s)Tomatoes, Roma, Fresh, 1 Med, 3 servingCelery, raw, 5 stalk, small (5" long)Cucumber (with peel), 3 cup slicesRed Onion Raw (1/4 cup, 40g or 1.4oz), .5 cupFeta Cheese, 1 cup, crumbledGreek Seasoning - salt free [Spice Hunter], 5 tspCalorie Wise Greek w/ Feta & Oregano, Signature Dressing -Kraft, 3 tbspGarlic - 2 cloves (Optional)
Directions
Combine Quinoa and four cups of water and bring to a boil. Turn heat on low, cover and cook for 15 minutes. Let cool.
Dice Tomatoes, Celery, Cucumbe$r, Artichoke Hearts and onion into small pieces.
Mix in bowl with greek seasoning and dressing.
Mix in Feta and Quinoa once cooled.

Serving Size: Makes approximately 12 cups - each serving is equal to 1 cup.
