Momma's Zucchini Bread

3 c Whole wheat flour1 1/4 granulated sugar6 tsp Ener-g Egg substitute or 4 eggs1/4 c canola oil2 c shredded zucchini1 c applesauce, unsweetened1/2 tsp baking powder1 tsp baking soda2 tsp cinnamon1/2 tsp nutmeg1/2 tsp salt1 tsp vanillaoptional (and included in nutritional info)2 tbsp chopped walnuts, sprinkled on top of the loaves.
This recipe yields 2 9'' loafs, 12 slices each or 24 medium muffins. The picture is 12 muffins and 1 9'' loaf pan.
Preheat oven to 350 degrees.
Mix flour, cinnamon, baking powder and soda, salt, nutmeg, and sugar. Mix the Ener-g egg substitute before hand in a bowl. Add that with the flour mixture along with sugar, zucchini, oil, vanilla, and applesauce. Mix until everything is moist and well blended.
Pour the batter into the pans and place in oven for 30-45 minutes. Check after 30 minutes. Muffins will bake faster than loaf pans will.
Makes about 24 servings.
