1 large Tomato, halved with seeds removed1 ear of corn, cleaned1 half red bell pepper1 half sweet onion, wedged in quarters1 clove garlic minced1 tbsp fresh cilantro1/2 fresh lime zested1 tbsp good quality olive oil
Grill your tomato, bell pepper, corn and onion till they have good grill marks and are warm yet still firm. Remove from heat and dice. (Or shave corn from cob.) Mix together with remaining ingrediants and let sit for 5 minutes. I use this with black beans and diced chicken on baked torilla chips when my daughter wants nachos. It also works nicely with eggs.
