Ingredients
2 eggs, whisked1 3/4 cups can coconut milk2 tablespoons coconut oil or butter, melted1/4 cup coconut flour3/4 cup quinoa flour3 teaspoons baking powder1/2 teaspoon salt1/2 cup unsweetened shredded coconut
Directions
Combine the eggs, coconut milk and coconut oil. Stir in the remaining ingredients. Melt a generous dollop of coconut oil in a frying pan over medium-low heat. Pour in some batter. When the surface starts to bubble, flip and cook the other side.

Serving Size: Makes 4-6 large pancakes or 8-12 smaller ones
