Lemon grass chicken

Ingredients
2 stalks lemon grass, smashed and chopped fine4 cloves garlic6 Tbsp. light soy sauce6. Tbsp. peaunt oil1 bunch cilantro chopped2 Tbsp. honey4 boneless skinless chicken thighs
Directions
Set the oven to 350.
Trim outside stalks off the lemongrass. Cut off the top inch of the stalk. Smash the stalk with a meat tenderizer, hen chop fine.
In a food processor, combine all ingredients but the chicken. Process until fine but not perfectly smooth.
Put the chicken in a caserole dish and cover with the lemongrass mixture. Bake for one hour.

Serving Size: Makes 4 servings. Serve with Brown rice
