Vegan Mashed Potatoes and Gravy

Ingredients
10 yukon gold potatoes2 tbs evoo1 C almond milks&p5 C vegetable broth1/2 C mushrooms1/3 C onion1 tsp evoo1/2 C flour1/3 C almond milkspices (thyme, oregano)s&p
Directions
clean and boil potatoes
while boiling, brown flour in a saucepan
remove flour to a separate bowl
brown onions in oil in saucepan
add vegetable broth and spices
add flour into milk and stir well
slowly incorporate flour mixture into saucepan
simmer until thick
add mushrooms and mix gravy
take out potatoes when ready
blend with oil and milk (or mash)
enjoy together!
