Coconut Flour Breadingredients:1/2 cup coconut flour1/4 tsp Celtic sea salt1/4 tsp baking soda5 or 6 eggs1/2 cup coconut oil, melted
directions:
Preheat oven to 350°F.
Sift together the dry ingredients.
Slowly add the eggs one at a time into the dry ingredients and blend until smooth. Add the coconut oil and blend thoroughly.
Put batter into a greased small bread pan.
Bake for30-40 minutes, or until a toothpick comes out clean and sides are drawn away from the sides of the pan.
Serving Size: makes 14 slices

I was skeptical but made according to instructions (5 lg eggs did it); had to use 2 mini-loaf pans but it still baked within time frame (32 min), rose well. Yummy! Very moist (oily), smells coconutty & like it will be sweet, but with flat tang of plain bread. Great plain or with salted butter. - 5/16/15

The consistency and smell is great, but I found myself feeling a little disappointed that it wasn't the tiniest bit sweet. I think I may add a little Truvia next time and double the batch so that it makes a nice, big loaf. Then I can use my electric knife to make the slices thin for sandwiches. - 8/8/15
