Homemade Chicken & Rice Soup

Ingredients
6 cups home made chicken stock3 carrots, chopped3 stalks of celery chopped1 cup onion, diced3 cups roasted chicken, chopped3 cups cooked brown rice2 cups frozen spinach6 tablespoon pesto sauce
Directions
combine chicken stock, carrots, celery & onion in a 3 quart sauce pan and bring to a simmer. Simmer for 15-20 minutes until vegetables at tender, but not mushy.

Add chicken, cooked brown rice & frozen spinach to pan and cook until ingredients are hot.

Serve in soup bowls with pesto on top.
