Beefy Chuck Chili

Ingredients
1 lb beef chuck, cubed1 tbsp olive oilcooking spray1 medium onion, diced1 poblano pepper, diced3 cloves garlic, diced2 tbsp chili powder (I use Penzey's Chili 3000)1 15.5 oz can tomato sauce1 15.5 oz can fire roasted diced tomatoes2 cans red, black, or chili beans 2 cups beef broth
Directions
Brown chuck in oil in a large heavy bottomed pan. Wipe pan out and add onion, poblano, and garlic with a spritz of cooking spray. Cook until soft. Add chili powder, stir and cook 1 minute. Add beef back into pan along with remaining ingredients. Bring to a boil then reduce heat. Either cook on medium-low on the stovetop or in the oven at 275 for about two and a half hours or until the beef is tender. Serve with light sour cream and crushed tortilla chips.

Serving Size: Should make about 8 one-cup servings once cooked down
