Simply Naked Quiche

6 large cage free, free range, organic eggs, beaten1 head organic broccoli, broken into florets1 sweet potato, washed, diced small1 red pepper, washed and diced1/2 cup onion of choice (I love red onions), diced1/2 t Himalayan salt
1. Steam broccoli and sweet potatoes for 4 minutes.
2. Oil a glass pie plate with coconut oil or nonstick spray (Remember a little dab will do).
3. Line bottom of pie plate with veggies.
4. Mix salt into beaten eggs.
5. Pour over veggies.
6. Bake in a 350 degree preheated oven for 20 minutes or until toothpick inserted in middle comes out clean.
7. Enjoy with a nice salad for dinner, or even as a snack or breakfast with a cup of fruit.
