Breakfast Egg Casserole

Ingredients

8 eggs1/2 c almond milk (whisked into eggs)1lb turkey sausage (crumbled/out of casing)3 c fresh spinach1 medium red papper, chopped
Preheat oven to 350.
Remove turkey sausage from casings and brown
Meanwhile, whisk eggs and almond milk (season to taste, preferably with no-salt seasoning)
Chop pepper
Spray a 9x9 pan with oil spray of choice. Then layer turkey sausage first, followed by spinach, then red pepper. Finally, dump egg mixture over top.
Bake at 350 for 40 minutes, or until eggs set.
Cut into six servings - refrigerates great to heat up throughout the week!
