Ingredients
cauliflower, raw, 1 head, smalltomatoes, red, ripe, canned, with green chilies, 1 cupCheddar Cheese, 3 oz
Directions
drain tomatoes and chilies well
clean and remove outer leaves on cauliflower
break or cut into pieces and process in the food processor until fine
place in microwave safe bowl, cover with plastic wrap and cook on high 3 minutes, stir
add tomatoes and chilies, stir
add 2 oz of cheese, stir
sprinkle remaining cheese on top
heat 1 minute in microwave, uncovered
