Italian Baked Red Snapper

Sheet pan prep 1 tsp garlic paste 1 TBS olive oil • 1 red snapper fillet, about 12” long 4” wide• Rub • 3-4 tablespoons olive oil• 2 medium cloves garlic, pressed or minced• 1tsp balsamic vinegar• 1 teaspoon Italian seasoning herbs• 1/4 teaspoon fresh ground black pepper• 2 tsp basil paste• 2 TBS fine chopped onion• Topping• 6-8 grape tomatoes sliced• 5 or 6 baby spinach leaves torn up• 2 tablespoon freshly grated parmesan cheese, optional
Spread garlic paste and olive oil on a baking sheet or baking stone/baking board .
Mix first 7 ingredients minus the fillets in a shallow bowl . rub this mixture on the fillet both sides. Place on the sheet. Cover with tomatoes, spinach and parmesan cheese.
Bake for approximately 25 minutes at 350 degrees . when turns white and flakes off easily

Made this recipe with red snapper and it was fantastic. The only thing I would do different is to let it set on the paste in the marinade (rub) for a couple of hours at room temp before cooking. Baked it on the grill at 700 degrees for 4 mins then at 350 for 25 mins. Turned out fantastic. - 1/9/16
