Easy Quinoa and Black Beans

Ingredients
3/4 c. quinoa1 c. onions, chopped5 cloves garlic, minced1.5 c. chicken or vegetable broth1 t. coriander1 heaping teaspoon grown cumin1/4 t. cayenne pepper1 can sweet corn2 cans black beans, drained and rinsed3/4 c. chopped fresh cilantroroma tomatoes, chopped, (opt.)1 t. coriander1 heaping t. ground cumin1/4 t. cayenne pepperSalt and pepper to taste
Directions
In a medium saucepan, heat olive oil, saute onions and garlic until transluscent and/or lightly browned. Mix quinoa into the saucepan and cover with broth. Season with cumin, coriander and cayenne pepper. Bring mixture to a boil. Cover, reduce heat, and simmer 20 min. Stir the corn into the saucepan, and continue to simmer about 5 min. until heated through. Mix in the black beans and cilantro.
