Black Bean Soup with Hamhock

Ingredients
1 - 1 pound bag dried black beans1 - 4oz Hamhock4 cups water4 cups low sodium chicken stock1 cup chopped carrots1 cup chopped onions1 cup canned diced tomatoes
Directions
Soak beans over night in cool water. In the morning drain and rinse beans (sort through to clean any debris). Add beans, veggies, hamhock, and water to crockpot and simmer on low for 6-8 hours until beans are tender and all the meat has fallen off the hamhock. Add chicken stock to desired soup consistency. Add salt, pepper, and herbs of your choice to taste.
