Ingredients
1.5 cup long grain white rice, raw16 oz turkey sausage, sliced16 oz chicken breast strips 8 oz tri-mix bell peppers, diced 8 oz onion chopped14.5 oz diced tomatoes, no salt added 8 oz tomato sauce, no salt added 7 oz green chiles, drained 2 Tbs no-sodium creole seasoning
Directions
- Cook rice according to package directions. While rice is simmering,
- Spray a large cast iron skillet with canola oil spray.
- Add chicken, cook over medium heat 4 minutes, turning frequently.
- Add onion, bell peppers and sausage and continue cooking until chicken is cooked through and onions begin to brown.
- add remaining ingredients, mix thoroughly and continue cooking 30 minutes.
- Add cooked rice and stir to mix.

Serving Size: makes ten 1.5 cup servings
