Chilled Mediterranean Couscous Salad

Ingredients
-1 box of Near East Whole Grain Blends Wheat Couscous, roasted garlic and olive oil flavored and prepared per package directions.-1/2 pound chicken tenderloins, seasoned with salt, pepper, paprika and rosemary, baked and cut into bite sized pieces-1/2 c. canned black beans- 3 oz. marinated artichoke hearts, diced- 15 kalamata olives, diced- 5 sundried tomatoes, diced- 24 grape tomatoes, halved- 1 c. shredded part skim mozzerella- 2 cups baby spinach or kale (optional)
Directions
Once all ingredients that need to be cooked are complete, simply combine everything together and let chill for at least 3 hours before serving.
