Simply Delicious Protein Pancakes -- Flour and Oat Free

1) 30 grams rice-based protein powder (I used Sun Warrior original for the calculations, about 1 and 1/3 scoops)2) 1/4 cup egg beaters, or 1 full egg (egg beaters used in calculation)3) enough unsweetened almond milk (or water) as needed to thin to pancake consistency--nutritional include 1/4 cup4) however much stevia or spices suit your fancy!
Heat your skillet or griddle to medium and spray with nonstick cooking spray (I like to use coconut).
Mix first the protein powder and egg, then add almond milk until desired consistency. Mix in sweetener.
Pour in small batches onto griddle and cook until bubbles form and edges solidify; then flip. Continue with remaining batter.
Super simple, and super delish! Enjoy, perhaps with some nut butter or fresh fruit on top :)
