Ingredients
##Cucumber (with peel), 0.5 cup slices (remove)##Cooked Onion, .5 cup (remove)##Cilantro, raw, 5 tbsp (remove)##*Jalapeno Pepper, 1 Raw Pepper, .25 serving (remove)##*Red Bell Pepper (Peppers, sweet, red, raw) (USDA) (1 small, 74 g), .5 serving (remove)##*Apple Cider Vinegar, 16 tbsp (remove)##Granulated Sugar, 2 tsp (remove)
Directions
Slice cucumbers, dice onions, jalapeno pepper, red bell pepper, chop cilantro. Place in a non-reactive bowl. Mix together vinegar and sugar and poor over the mixture. Chill for an hour before serving.
