Lentil and Ham (Bacon) Soup with Kale and Spinach

Ingredients
3-4 Large Stalks of Celery4 Large Carrots1 Large onion1 Cup Bacon or Bacon Ends1 Ham Bone1 and a half pounds of Lentils6 Cups Chicken or Vegetable Broth4 Cups Water2-3 Bay LeavesSalt and Pepper to Taste
Directions
Chop celery, carrots, and onions. sautee them lightly in the slow cooker on high until onions are slightly translucent.

Then add lentils, ham bone, bacon, water, chicken broth, bay leaves and salt and pepper.

slow cook for 6-7 hours or pressure cook for 45-60 minutes.

Serving Size: Makes approximately 19-20 1 cup servings.
