Cucumber Chicken Salad

2 cans (12.5 oz) chicken breast (approximately 1.5 cups, shredded)1/2 cup light Miracle Whip3 stalks celery, diced (about 3/4 cup)1/2 medium cucumber, peeled and diced (comes out to about 3/4 cup)1 tbsp lemon juice1/2 tsp dill weed (could use fresh if available)1/2 tsp garlic powder3 tbsp dried parsley (could also use fresh)black pepper to taste
Shred chicken with a fork, mix in medium-sized mixing bowl with remaining ingredients.
Serve on a bed of lettuce with optional tomato or cheese.
