Frittata - Turkey Sausage, Spinach & Veggies

Mix together using a whisk together well:2 cups Egg Substitute8 large eggs1/4 cup half & half1/2 tsp ground nutmegAdd to egg mixture after whisking eggs until well blended: 1/4 cup crumbled Feta cheese Chop up:4 Frozen sausage patties (Jimmy Dean turkey sausage)1/2 med size onion (white, yellow or red)6 baby portabella mushrooms diced or sliced1/3 cup bell pepper (red, yellow, orange or green or combo)1/2 cup broccolli small pieces1/2 cup zuchini small pieces1/2 tsp Himalayan Pink salt 1 tbsp extra virgin olive oil1 tbsp butter or smart balance1/2 tsp red pepper flakes (optional)4 cups of fresh baby spinach 1/2 cup shredded Mozzarella cheese1/4 cup Italian 4 cheese blendIf you like you could sprinkle sweet basil or italian seasonings over the top of the Frittada.

Preheat oven to 350 degrees.
Large skillet (12-14 inches diameter)
In large non-stick skillet on med-high melt 1 tbsp butter and 1 tbsp extra virgin olive oil, add in 1/4 tsp red pepper flakes. Add onions and salt and saute for 1 minute then add sausage and other veggies. Stir occasionally for about 2 minutes then add baby spinach and let it wilt down. Once Spinach is wilted add egg mixture to the pan and stir the veggie mixture into the eggs. Sprinkle over the top with Mozzarella cheese and Italian 4 cheese blend and then place in the center of the oven. If you like you could sprinkle sweet basil or italian seasonings over the top of the Frittada.
Bake for 20 - 25 minutes until firm in the center and then put under broiler for 3 to 5 minutes until cheese on top is brown to your desired level. Remove and let cook for about 5 minutes. Makes 8 servings.
