Vegan Lemon Arugula Orzo Salad

2 c. cooked whole-wheat orzo12 grape tomatoes1 medium zucchini2 cups arugula1 lemon, juice and rind4 T. raw walnuts2 T. fresh basil2 garlic cloves1/2 t. sea salt
Cook orzo until done, about 9 minutes. Chop zucchini and arugula; slice grape tomatoes in half; mince basil and garlic; zest lemon. When orzo is done cooking, rinse and drain well. Add arugula to the warm pasta and toss. Then add the rest of the prepared vegetables and seasonings. Squeeze lemon juice over all and toss. Let rest for a little before eating.
