Low Fat Dark Chocolate muffins

Ingredients
Old fashioned rolled oatsMilk 1%whole wheat flourbrown sugarunsweetened applesauce2 eggsbaking powderbaking soda4-6 tbls. unsweetened cocoa powdermilk or semi-sweet chocolate chips
Directions
Soak the oats in milk for about one hour. Preheat oven to 375 degrees. Spray muffin tin with cooking spray. Combine oat mixture with applesauce, egg and egg white. In a separate bowl, whisk dry ingredients together. Add wet and dry ingredients together and stir until just mixed. Do not over mix or the muffins will be tough.
Bake for 20 minutes.
