Huge Breakfast Cookies

Ingredients
1 1/2 cups brown sugar2 1/2 cups rolled oats (not quick)3 1/2 cups whole wheat flour1/2 cup flaxseed meal1/2 cup toasted wheat germ1 Tbsp baking soda1 tsp baking powder1 tsp salt1-2 Tbsp cinnamon1 cup unsweetened applesauce1 cup raisins, or other dried fruit1 cup walnuts, optional (not in calculation)
Directions
1. Preheat oven to 325F.
2. Mix all ingredients together.
3. Line baking sheets with wax paper and spray with cooking spray.
4. Drop by 1/4 measuring cups onto prepared cookie sheets, about 2 inches apart. It is best to work with damp fingers and measuring cup.
5. Flatten cookies to 1/2 inch tall using damp hands.
6. Bake 8-10 minutes. 8 minutes for chewy, 10 minutes for dry.
7. Allow to cool before trying to take off waxed paper, otherwise they will break!

Makes 24 cookies. 1 cookie per serving.

    I was glad to see MOMRULZ09's note about adding ingredients bc the dough is too dry otherwise. I added a whole egg and another 3/4 cup of applesauce. They ARE delicious! - 4/12/10

    Glad to have the input about dry dough - I too added (to a half-batch) an egg white, 50% more applesauce, and 3 tbsp. of almond butter, and that made it just stick together. I cooked one tray softer and one tray crunchier - liked the crunchier better! They are nice and big, too. - 1/17/14
