1 Can Lite Coconut Milk4 Ripe Peaches cut into small chunks1 tsp Cinnamon1 Cup plain Greek Yogurt (could leave this out for dairy considerations)1/4 Cup Honey2 scoops Vanilla Whey powder
Slice and chunk up peaches into saucepan and add honey. Cook until they start to break down. Use an immersion blender once they become softened to puree up the mixture. Add coconut milk and yogurt if you prefer (otherwise you can leave out for lactose intolerant). I decided to add yogurt for a little creaminess and consistency. Let cool for a little bit and add to your ice cream maker for the recommended time or until desired consistency.
