3 large peppers2 large tomatoes200 gr portabella tails1/2 onion1 tbsp safflower oilbasil, garlic, salt, pepper, pepper flakes - spiceswater
saute onions in 1 tbsp of oil, add peppers and some water. Cover and let it cook for 10 mins, add mushrooms cook for another 20 mins, add tomatoes and spices (season to taste) cook till tomatoes get cooked and most of the water/juices are gone. Last 10 min cook uncovered.
