Ingredients
3 tbsp olive oil3 -4 chicken breasts pieces2 cloves of garlic mincedpinch red pepper flakes1 tsp smoked paprika2 red peppers sliced thinly12 oz chirozo1 onion diced3 tbsp tomato paste2 c long grain rice3 1/2 c chicken stock1/2 c white wine1 lb or more shrimp1 tsp crushed saffron1 c frozen peas
Directions
brown chicken in oil - trans fed to bowl
to oil add garlic, red peppers, chirozo slices, paprika, red pepper flakes
Transfer to bowl
in oil cook onions till soft
add tomato paste cook stirring constantly,
Add in rice stir into tomato paste
slowly add stock and white wine
cook covered until all liquid has been absorbed
add chicken, peppers, chirozo & shrimp to rice mix
stir well and add peas
heat through & garnish with parsley
